The product
We are the first Italian company to strive for the specific and diversified selection of olive cultivars, which we proudly state on our labels.
A careful selection of raw materials and rigorous checks by qualified staff ensure extremely high quality.
Innovation
We offer a longer product shelf life while maintaining its unique and original sensory characteristics without the addition of preservatives.
This ability paved the way for extremely fresh products (no heat treatment, packaged in a protected atmosphere), fresh products (low-temperature pasteurisation) and preserved products (classic pasteurisation).
Technology
We continuously invest in next-generation machinery for greater efficiency and full product traceability. Our forerunner is a new machine that provides a 3D X-ray analysis of a product.
It reduces any presence of stones and/or fragments to 0.01% (1 in 10,000 olives), compared to the international standard of 0.5% (1 in 200 olives).
The production process
The heart of our company is Research & Development, as it makes it possible to continuously improve production and study new recipes and product lines. We are able to intercept new demands, which inspire us to design and develop new products. We are the first company to offer a product in different packaging (first sachets, then trays), which encouraged the birth of the refrigerated olives segment. We guarantee the safety and shelf life of products, while maintaining the sensory characteristics of each cultivar without the use of preservatives: we rely on our advanced technological expertise.
Thanks to this expertise, we are able to offer Extremely Fresh products, which do not undergo any heat treatment and are packaged in a protected atmosphere, Fresh products, which are stabilised using a researched and deliberately low-impact pasteurisation process, and Preserved products, which undergo classic pasteurisation.
We purchase the best raw material on the market and protect it in a covered area spanning 10,000 m2, of which 5,000 is refrigerated. All products feature monitoring and checks of the raw material, management and control of the transformation and packaging process and chemical, physical and microbiological controls, even after they are packaged.
The packaging area is divided into 5 separate departments with 20 next-generation automatic packaging lines that comply with Industry 4.0 regulations. The lines can produce over 22 million packs per year.
The entire packaging area is temperature and humidity controlled.
We constantly invest in the production process, using and researching next-generation machinery in order to guarantee high quality standards. We recently developed and implemented the Manufacturing Execution System, a system that provides real-time information required to control, manage and optimise all production process activities.
It has allowed for greater efficiency of production, the full traceability of processes and an improvement of the service in terms of speed, punctuality and quality.
The production organisation
- Complete overhaul of the Carsoli production site in 2021.
- Today, the company occupies a surface area of 70,000 m2, of which 28,000 m2 is covered. The ample space available ensures that we can store enough product so that olives from every cultivar are available throughout the year, in addition to a new production organisation divided into departments with qualified operators.
- Application (from January 2022) of Lean Manufacturing, a model also known as the Toyota Production System. The model is inspired by the principles of Kaizen Japanese philosophy: elimination of waste and continuous improvements to efficiency to guarantee maximum quality.
