The D.O.P. excellence of Lazio olives

In the Aeneid, Virgil celebrated the Gaeta Olive as a precious fruit, but its most widespread references are found in the Middle Ages, when it was commonly found in the main port cities of Europe. To achieve certification of protected origin, or D.O.P., the Gaeta Olive must be spherical in shape, have a minimum diameter of 12 mm, and a colour ranging from bright pink to purple. With flesh that comes away completely from the pit, it has a soft texture and characteristic slight bitterness.

Serving suggestion

Thanks to its flavour tending towards more bitter notes, the Gaeta D.O.P. Olive is extremely versatile in cooking: it can be used in sauces, white meat and wild game recipes, and for bread making. In rural tradition, it is also used in vegetable side dishes and by fishermen in seafood recipes found on the Lazio coast. In international cuisine, the Gaeta D.O.P. Olive is certainly one of the most commonly used ingredients by chefs.
