Legumes with Giant Sweet Olives

Here is a Mediterranean side dish of vegetables and legumes enriched with taste thanks to the special goodness of our Giant Olives. A very nutritious recipe, rich in nutritional values and vegetable proteins.

Ingredients

Borlotti beans: 150 g
Cannellini bean: 150 g
Black beans: 100 g
Giant Sweet Green Halkidiki Olives: 100 g
Pomodorini: 8
Carrot: 1
Stick of celery: 1
Various herbs: to taste
Extra virgin olive oil: to taste
Salt: to taste
Pepper: to taste

Preparation

Soak the legumes overnight.  The next morning cook them in abundant water and after cooking; prepare a sauté with celery, carrot and onion.

Cook the beans for about 20 minutes to allow everything to absorb the favour.

Place on a serving dish and garnish with chives and giant green olives.
